Roasted Chipotle Cauliflower Tacos

Flavorful roasted cauliflower, coated in simple spices, black beans, crisp lettuce, and avocado all come together in the perfect taco with a creamy spicy lime tahini sauce. Cauliflower Florets: for the best results I recommend using cutting your cauliflower into larger florets instead of smaller pieces.

Spices: the cauliflower is packed with flavor thanks to a blend of tasty herbs and spices.

Black Beans: to make sure these tacos are nice and hearty, I like to add black beans to the mix. This is optional, of course, but I think it makes the tacos even better.

Spicy Lime Tahini: an optional but very delicious sauce to slather on your tacos.

Corn Tortillas: I love the flavor of corn tortillas in this recipe. Of course, feel free to use your favorite tortillas but corn tortillas are usually naturally gluten free and have a delicious texture and flavor in this dish.

Step One: First, start by preheating your oven to 425 degrees. Preheat oven to 425 degrees.

Step Two: Next, add the cauliflower florets, avocado oil, spices, and lime juice to a large mixing bowl. Stir until the cauliflower is well coated in the oil and the spices.

Step Three: Transfer the cauliflower florets to a sheet pan and spread into an even layer. You don’t want any of the cauliflower florets to be stacked on top of each other.

Step Four: Roast the cauliflower for fifteen to seventeen minutes until the florets are tender and slightly crispy. The should still have a little bit of “bite” to them. While the cauliflower is roasting you can whip up a batch of your spicy lime tahini.

Step Five: Remove the cauliflower from the oven and let it cool slightly while you gather the rest of your taco ingredients.

Step Six: Now, it’s time to assemble your tacos! Start with warmed corn tortillas then add shredded lettuce, black beans, the roasted cauliflower, spicy lime tahini, pico de gallo, and avocado. Serve immediately and enjoy!
