Coarsely ground, partly crushed Black Peppercorns (From Middle English peper, originally from Sanskrit pippali) are used to enhance the flavour of both savoury and sweet dishes.A universally popular spice it is a berry that grows in grapelike clusters on the pepper plant (Piper nigrum ), a climbing vine native to India and Indonesia.
Black Peppercorns, are picked when the berry is not quite ripe, then dried until it shrivels and the skin turns dark brown to black. It's the strongest flavoured of the three — (white, green, black) and is slightly hot with a hint of sweetness. Peppercorns should be cracked (partly crushed) to release the flavour prior to application.
