The fruit is looking particularly good this year with a higher juice content than usual for this time of year. They have benefited from a hot spring and a consistent amount of moisture over the summer period.
Remember that as limes ripen, they start to turn yellow. This usually happens towards the end of the season (July) when temperatures start to reduce. At this point the juice content also continues to rise to the point where they are literally dripping with juice!
