Australian Black "Berkon" high germination Sproutable Mung Beans. Non Heat-treated. High in vitamins and minerals especially Iron, Calcium, Potassium, Phosphorus, Vitamins A, B1, B2 and C and Niacin. These small dried beans with yellow flesh and a (normally) green skin are most commonly used to grow bean sprouts.
When sprouted there is an average 300% increase in Vitamin A and 500 to 600% increase in Vitamin C. In the sprouting process starches are converted to simple sugars making sprouts easily digestible. For optimum crispness sprouts are best eaten raw but may also be stir fried or sauteed but should only be cooked for 30 seconds or less. Longer cooking wilts the sprouts.
