Durum wheats are the hardest and highest (>15%) wheats grown and, although high in gluten, are not good for baking. Instead they are most often coarsely ground into Semolina, the basis for excellent pasta. Good pasta and Gnocchi (dumplings) are made from Semolina. High in energy-giving carbohydrates, the yellow durum kernel heart gives semolina its pleasing golden colour.
