Ingredients: Celery Seeds. Celery seeds are small, tan, fresh smelling dried fruit of the wild celery plant called "smallage". Celery (from French céleri, orig. from Greek selinon - parsley) is mentioned in Homer's Odyssey dating from 850 BC. Celery seed is used in celery salt, bouquet garni, pickling and curry spice blends, and the ethnic cuisines of Germany, Italy, Russia, and the Orient. It gives a warm flavour to soups and stews, salad dressings, breads, vegetables, tomato dishes and is used in pickling.

A recipe for “Old Bay Seasoning” is:- 1 Tbsp. Celery Seed; 1 Tbsp Whole Black Peppercorns; 6 Bay Leaves; 1/2 tsp. Whole Cardamom; 1/2 tsp. Mustard Seed; 4 Whole Cloves; 1 tsp. Sweet Paprika; 1/4 tsp. Mace (or Nutmeg powder). Grind well (or buy pre-ground) and mix. Celery tea is made by pouring a pint of boiling water over a tablespoonful of Celery seeds (freshly ground) and allowing it to steep, cool, then strain and drink.
