•    Look for bunches with a good tight formation. Leaves should be fresh and unwilted. Stems should be firm and crisp when snapped. 
•    Store in the refrigerator in paper bags, or a jar filled with 2-3cm of water changed daily. 
• Eat raw as a snack on its own, or with peanut butter or a dipping sauce. Add sliced celery to savoury dishes like stir fries, stews, pies or soups. The leaves can be used in salads, or as a garnish.
