We love summer stone fruit salads! Like this grilled nectarine, prosciutto and halloumi salad by @missrachelphipps. Recipe below 👇 🍑
1/2 block halloumi
large ripe nectarine
large handful pea shoots
2 slices prosciutto
small handful chopped pistachios
1 tsp extra virgin olive oil
1 tsp elderflower or white wine vinegar
1/2 tsp elderflower cordial
freshly ground black pepper
- Heat a griddle pan. Slice the halloumi and the nectarine. Griddle the slices until charred.
- Meanwhile, arrange the pea shoots, prosciutto and the pistachios on a plate.
- Whisk together the oil, vinegar and cordial.
- Scatter the griddled fruit and cheese over the plate before finishing with a generous drizzle of dressing and a few good grinds of black pepper.
