Rice flour is ground, milled white (or brown) rice. Rice flours do not contain gluten, a structural protein found in wheat flour. It is used in bakery foods, breakfast cereals,meat products, breading and pancake and waffle mixes. Compared with other grains, rice is considered one of the highest quality proteins. It is also a good source of several nutrients, including the B-complex vitamins - thiamine 6%, riboflavin 1%, and niacin 6% - and the essential minerals phosphorus 3%, iron 7% and potassium (trace).
