Other members of this plant family are turmeric and cardamom. Fresh ginger root has a strong flavour that's both peppery and sweet, is juicy and has a lemony scent.
Dried ginger doesn't emit the same lemony aroma, although you can substitute 1/4 tsp. of ground ginger for 1 tbsp. of fresh, grated ginger. Some manufacturers suggest soaking dried whole ginger in water for an hour, then using the same measurements you'd use for fresh ginger.
Powdered dry ginger root is typically used as a flavouring for recipes such as gingerbread, cakes, ginger ale and ginger beer. Ginger is also used as a spice added to hot coffee and teas.
