Barley is a rugged, hardy grain high in protein, fibre and carbohydrates and provides a great deal of bulk by absorbing 2-3 times it's volume of the cooking liquid. Barley also contains antioxidants, phytochemicals, vitamins including niacin (vitamin B3), thiamine (vitamin B1) and minerals esp. selenium, iron, magnesium, zinc, phosphorus and copper. (Barley is a rich grain source of Selenium. Unlike other grains, barley contains fibre throughout the entire kernel, not just the bran.
Even after the bran is removed, barley flakes retain at least 50% of their original fibre content. Barley flakes may be cooked like oatmeal or used in baked goods such as breads, muffins and cookies. They have a rich nut-like flavour and chewy with its pasta-like consistency.
