Beans - Pink, Pinto, Haricot (Great Northern), Small Red (Kidney), Black Turtle, Blackeye. High in proteins and minerals especially calcium, potassium, phosphorus and copper. Also rich in vitamins A, B1, B2 B6 and niacin. Cook in liquid to soften cellulose fibre, then let soak overnight.
Note: If baking soda is added to speed up the softening of the cellulose, the thiamine (vitamin B1) content is destroyed.
